Description
The Berkel Volano B116SA is a semi-automatic flywheel slicer designed for high-volume environments such as supermarkets and large-scale charcuterie departments. This machine combines the traditional aesthetic of a hand-painted floral flywheel with the mechanical efficiency required for modern commercial production. Constructed from painted aluminum with stainless steel parts in all food-contact areas, the B116SA provides the necessary speed for intensive use while preserving the artisanal slicing quality that prevents product bruising.
Performance is centered around a high-precision 14.5" chromed steel blade. Features a semi-automatic operation with a variable speed carriage, allowing operators to maintain a consistent rhythm while standardizing output. The system ensures perfectly straight cuts and minimizes product waste, while the balanced flywheel design still permits manual operation for total control during delicate service tasks.
The B116SA includes a 360° blade protection ring and an automatic shutdown feature that triggers after 60 sec. of inactivity to protect staff. For efficient daily sanitation, the stainless steel receiving tray and meat table are fully removable without the use of tools. A built-in sharpener is housed in a dedicated top compartment, maintaining a razor-sharp edge for consistent, paper-thin results during the busiest shifts.
