Description
The StagionelloEvo® 100 + 100 Kg Twin Meat Curing Cabinet is constructed with AISI 304 stainless steel, offering a non-porous surface that simplifies sanitation. The unibody frame is injected with CFC-free polyurethane foam to provide thermal efficiency and a high R-value. Dual insulated glass panels with UV protection allow to monitor the fermentation process while shielding sensitive meat products from light damage.
The twin-chamber design provides a total capacity of 200 Kg, divided into 2 independent 100 Kg sections. Each compartment includes 4 guide sets and 20 stainless steel hanging rods to organize traditional salumi or whole muscle cuts. Integrated resistance lines on the doors prevent condensation, ensuring clear visibility in environments with high relative humidity.
An automated ClimaTouch® control system utilizes a 6" touch screen to manage temperature, humidity, and air velocity across sequential processing stages. The patented Fumotic® system regulates moisture and flavor profiles without needing combustion. A pre-calibrated pH probe connects to the PLC to record data, assisting kitchens in maintaining strict HACCP compliance.
