Description
The Vulcan Electric 28-Gallon Tilting Braising Pan is built for high-demand commercial kitchens. With its usable capacity and a temperature range from 26°C - 250°C (80°F - 482°F), it supports searing, browning, simmering, boiling, shallow frying and bulk production tasks in one unit. Its wide cooking zone allows teams to manage large batches without shifting between multiple appliances.
Includes multi-zone temperature control, multiple timers and an auto mode for programmed recipes, helping operators maintain consistent results across repeated menu items. Manual pan and kettle modes give staff flexibility when switching between cooking styles, while the powered drain, retractable spray hose and automatic water fill help streamline cleanup and prep during fast service hours.
For workflow efficiency, the PRECIPAN™ is equipped with a motor-driven tilt/lift system and an auto-lift arm for compatible baskets. The Braising Pan is food-probe ready and includes a strainer, with optional accessories such as mesh baskets, scraper tools and carts available for expanded production.
