This unique 8-inch blade features 71 alternating layers of high carbon, high chromium VG10 and VG2 stainless steels that have been forged together to create an incredibly sharp knife with an elegant herringbone Damascus design.
Thanks to the knife's Dual Core blade, it's designed to feel sharp for longer. With normal use, the two steels will wear at different rates causing micro serrations along the edge. Etched laminations in the blade also help prevent food from sticking to the sides and allow the knife to glide effortlessly through any kind of meat and vegetable.
Shun's Dual Core 8" Kiritsuke has a traditional Japanese octagonal handle made from ebony pakka wood that will provide you with a comfortable and secure grip all day long.
Design and Use
The kiritsuke is known as the master chef's knife in Japan. Like the chef's knife, the kiritsuke is extremely versatile making it the perfect tool for preparing meat, fish, and vegetables in any number of ways.
