Versatile Technology
Using patented advanced technology, this electric sharpener is designed to sharpen both Euro/American and Asian style knives. The AngleSelect function expertly restores and recreates the 20 degree edge on many European and American style knives as well as the 15 degree edge found on many Asian style knives.

3-Stage Sharpening System
The Chef’sChoice Model 1520 sharpener uses a 3-stage system for sharpening all types of knives. The first two stages sharpen and hone the knife’s edge using 100% diamond abrasives. The first stage is for knives with a 15 degree edge and the second stage is for 20 degree knives.
The third stage is used for polishing the edges after they’ve been sharpened in Stages 1 or 2. Similar to a barber’s strop, Stage 3 uses revolutionary flexible stropping/polishing disks for an extremely sharp and flawless edge.
